    In my quest to anti-inflame… or de-flame… I found out that ginger is supposedly a natural anti-inflammatory. I’m on a sciatica relief quest, and someone also suggested foot baths of vinegar and water. Now, I know it’s easy to go to Trader Joes and pick up some candied ginger, but it’s just too far for me to make the trip. I did find some in Chinatown, but it’s too expensive. So I found instructions on-line and made some myself. I must say it came out pretty good!

    Peel and thinly slice fresh ginger. I discovered a trick to peeling ginger is with the back of a spoon. Super easy!
    Place sliced ginger in a heavy saucepan.
    Mix up equal parts sugar and water. I used natural cane sugar.
    Add the sugarwater to the pan, to cover the ginger.
    Bring to a boil.
    Reduce heat and cook, stirring frequently.
    Cook until ginger is transparent, which for me was maybe 2 hours.
    Drain the syrup and save to make home-made ginger ale (mix a couple tbsp’s with soda water!).
    Toss cooled ginger in sugar to coat.
    Dry it out in an oven on very low heat. Maybe 250° for 1-2 hours.
    Store in the fridge.
